Chia is my favorite breakfast food and/or dessert. It is a seed from Central/South America that is high protein, fiber and beneficial omega-3. It is also easily digestible and considered a raw food. I add 4T chia to 1/4 c liquid (almond milk, water, etc.), let it sit for a minute to gel and spice it up with blueberries, coconut or other toppings.
